Gittik, adam alet edevat\u0131n\u0131 \u0130stanbul\u2019dan getirmi\u015f, borular\u0131 gaza takm\u0131\u015f, dizmi\u015f \u015fi\u015fe domuz etlerini, etlen d\u00f6nd\u00fck\u00e7e \u015fapur \u015fupur akan ya\u011flan alt tavaya doluyor, etrafta tuhaf bir koku. Daha fazla \u00fczerine e\u011filmek istemiyorum ama \u015funu da s\u00f6ylemeden ge\u00e7emeyece\u011fim \u201c<strong>\u00e7alma kapma k\u00fclt\u00fcr olmaz<\/strong>.\u201d\u00a0 Taklit yemeklerle masa kurulmaz. Bu bak\u0131ma Bulgaristan\u2019\u0131n Avrupa Birli\u011fi Standartlar Enstit\u00fcs\u00fcnden \u201c<strong>i\u015fkembe \u00e7orbas\u0131 ve kelle pa\u00e7as\u0131<\/strong>\u201d i\u00e7in \u201c<strong>Bulgar Markas\u0131d\u0131r Sertifikas\u0131<\/strong>\u201d istedi\u011fini okudu\u011fumda, \u201c<strong>e\u015fime, geleneksel patent elimizden gidiyor, bir i\u015fkembe yap da tad\u0131n\u0131 unutmayal\u0131m<\/strong>\u201d dedim.<\/p>\n<p>Konumuzda bir de baklava var. Bizim insan\u0131m\u0131z a\u011f\u0131z tad\u0131nda olan\u0131n biraz daha tatl\u0131 ve daha sulu olmas\u0131na g\u00f6n\u00fcl vermi\u015f oldu\u011fundan, biz Bulgaristanl\u0131 T\u00fcrkler baklava dilimlerini, g\u00f6z doyumu tam olsun diye olacak, b\u00fcy\u00fck\u00e7e e\u015fkenar d\u00f6rtken \u015feklinde keseriz. Bat\u0131n\u0131n \u015ftrudel tatl\u0131lar\u0131 ile Orient\u2019in di\u015f \u00e7atlatan tatl\u0131lar\u0131 aras\u0131nda bulunan Bulgaristan\u2019da biz Bulgar kom\u015fular\u0131m\u0131za baklava, revana, sarayl\u0131 gibi baz\u0131 tatl\u0131lar\u0131m\u0131z\u0131 \u00f6\u011fretirken, birka\u00e7 tatl\u0131m\u0131z\u0131 da kendimize saklamay\u0131 becerebilmi\u015fiz. Bulgarlar bizden baklava ustal\u0131\u011f\u0131n\u0131 \u00f6\u011frenirken \u201c<strong>bizimki daha tatl\u0131 olsun<\/strong>\u201d anlam\u0131nda, son bezelerin aras\u0131na bal d\u00f6\u015femeye ba\u015flayanlard\u0131r. Ball\u0131 baklava i\u015fini daha da ileri g\u00f6t\u00fcren S\u0131rplar ise, bal d\u00f6\u015fenmi\u015f beze aras\u0131na bir de kurutulmu\u015f kara erik (stenley) d\u00f6\u015feyerek \u00f6zg\u00fcn baklavac\u0131l\u0131kta bir ad\u0131m daha atm\u0131\u015ft\u0131r. Bilmezsin ve bilemezsin \u00e7\u00fcnk\u00fc Balkan alt\u0131 T\u00fcrklerimizin \u00f6zelidir. Tava dolusu d\u00fc\u011f\u00fcnlere ta\u015f\u0131nmayan bir aile tatl\u0131s\u0131d\u0131r. D\u0131\u015far\u0131 verilse dedi kodu olur. \u00d6yle bir tatl\u0131d\u0131r \u201c<strong>ya\u011f\u0131 tatl\u0131s\u0131<\/strong>.\u201d Ben de s\u0131rr\u0131n\u0131 vermek istemiyorum.<\/p>\n<p>\u00c7ok bizim olan tatl\u0131lar\u0131m\u0131zdan biri de \u201c<strong>kad\u0131ng\u00f6be\u011fi tatl\u0131s\u0131d\u0131r\u201d<\/strong> Mustafa Kemal Pa\u015fa bizde askeri ata\u015fe iken bir defas\u0131nda U\u015fumnu k\u00f6ylerine misafir olur. Mehmet Efendi ad\u0131nda bir k\u00f6yl\u00fc zatt\u0131n evinde a\u011f\u0131rlan\u0131rken ikram edilen bu tatl\u0131dan tadar. Y\u0131llar ge\u00e7er, \u201cBand\u0131rma Vapuru\u201dndan Samsuna inerken, Erzurum ve Sivas Kongresinde, \u00c7anakale\u2019de, \u0130zmir sava\u015f\u0131nda, Cumhuriyet kurarken o tat hep dama\u011f\u0131ndad\u0131r. Unutamaz ve \u00c7ankaya K\u00f6\u015fk\u00fcne yerle\u015ftikten sonra bir g\u00fcn Bulgaristan Ba\u015fbakan\u0131 Radoslavov\u2019a bir mektup yazarak U\u015fumnu\u2019lu Mehmet Efendi ailesinin evraklar\u0131n\u0131 haz\u0131rlayarak \u00f6zel g\u00f6\u00e7 olarak T\u00fcrkiye\u2019ye u\u011furlanmas\u0131n\u0131 ricada bulunur. Mehmet Efendi Bursa\u2019ya yerle\u015fir ve \u00f6nce \u201c<strong>g\u00f6bek tatl\u0131s\u0131<\/strong>\u201d derken, ad\u0131na \u201c<strong>\u015feker pare<\/strong>\u201d, ard\u0131ndan da \u201c<strong>Mustafa Kemal Pa\u015fa Tatl\u0131s\u0131<\/strong>\u201dn\u0131 T\u00fcrkiye halka patentsiz bah\u015feder ve ulusal k\u00fclt\u00fcr\u00fcm\u00fcze katk\u0131da bulunur.<\/p>\n<p>Anlatmaya \u00e7al\u0131\u015ft\u0131\u011f\u0131m Bulgaristan T\u00fcrklerinin mutfak geleneklerinden al\u0131nt\u0131lard\u0131r. <strong>Tarhana Tar Bo\u011faz\u0131m\u0131 Yakar, Baklava B\u00f6rek Gel Beni Kurtar, <\/strong>\u00f6z geleneklerimizden birini yans\u0131d\u0131r. Avrupa k\u00fclt\u00fcr\u00fcnde tatl\u0131n\u0131n yemekten \u00f6nce ve kahve ile birlikte sunulu\u015fundan farkl\u0131 olarak, bizde baklava ana yemek ard\u0131ndan gelendir. Bir a\u011f\u0131z tatland\u0131r\u0131c\u0131d\u0131r. Sofram\u0131zdaki \u00a0yeri de\u011fi\u015fmez.<\/p>\n<p>Bulgaristan T\u00fcrk\u00fcn\u00fcn ev ortam\u0131nda ve \u00f6zg\u00fcn bir \u015fekilde k\u0131\u015fl\u0131k haz\u0131rl\u0131klar\u0131ndan biri olan tarhanadan, ho\u015faftan, tur\u015fulardan ve nelerden nelerden uzun uzun s\u00f6z edebiliriz. Bunlar\u0131 haz\u0131rlamak bizim ya\u015fayan \u00f6z geleneklerimizdir. \u00d6zg\u00fcn mutfak k\u00fclt\u00fcr\u00fcm\u00fczd\u00fcr. Bir Frans\u0131z \u00f6zelimizi nereden bilsin!? 600 sene beraber ya\u015fam\u0131\u015f olsak da Bulgar bug\u00fcn bile ne tarhanam\u0131z\u0131n ne kavurmam\u0131z\u0131n ne de past\u0131rmam\u0131z\u0131n tad\u0131n\u0131 bilmez. \u201c<strong>\u0130\u015fimik<\/strong>\u201d olarak tan\u0131tt\u0131\u011f\u0131m \u00e7\u00f6kele\u011fin nas\u0131l ve ne kadar kaynat\u0131ld\u0131\u011f\u0131ndan nas\u0131l kurutuldu\u011fundan bihaberdir onlar. Biz Ahmet Do\u011fan \u00fczerinden Bulgaristan etnik az\u0131nl\u0131klar\u0131na dayat\u0131lan \u201c<strong>Bulgar Etnik Modeli<\/strong>\u201dnin \u00f6z\u00fcnde hen\u00fcz giremedikleri mutfa\u011f\u0131m\u0131z\u0131n hedef oldu\u011funa, yemek k\u00fclt\u00fcr\u00fcm\u00fcz\u00fc olu\u015fturan geleneklerimizin allak bullak edilmesi de bulundu\u011funa kesin inan\u0131yorum. \u0130yi oldu da \u015fu \u201c<strong>Bulgar Etnik Modeli<\/strong>\u201d salatas\u0131n\u0131 \u00e7\u00f6pe atabildik.<\/p>\n<p>Bir de \u015fu var. Bulgaristan\u2019da da TV programlar\u0131nda saatlerce tavuk, hindi, \u00f6rnek ve b\u0131ld\u0131rc\u0131n derilerinin kan p\u0131ht\u0131la\u015fmas\u0131 (holestorol) yapt\u0131\u011f\u0131 anlat\u0131l\u0131yor. Tarhana yo\u011fururken sab\u0131r s\u0131nav\u0131 veren ve bu i\u015fin zorluklar\u0131 kar\u015f\u0131s\u0131nda g\u00f6z\u00fcn\u00fc budaktan asla esirgemeyen analar\u0131m\u0131z\u0131n aziz hat\u0131ras\u0131na sayg\u0131m\u0131z var. Kapal\u0131 kavanozdan komposto i\u00e7me ile ekranda yemek haz\u0131rlaman\u0131n k\u00fclt\u00fcr olu\u015fturdu konusunda sorular\u0131m var. Mutfak gelene\u011fimizin olmazsa olmaz\u0131 olan \u201c<strong>sarma ve dolmalar<\/strong>\u201d nas\u0131l oluyor da ba\u015fka bir halk\u0131n markal\u0131 mutfak tac\u0131 olur. Bu gibi sorular hepimizi ilgilendirdi\u011fine inan\u0131rken, ba\u015fka halklar\u0131n edinimlerine sayg\u0131m\u0131z sonsuzdur. T\u00fcm yemek \u00e7e\u015fitlerinin t\u00fcm halklar\u0131n ortak k\u00fclt\u00fcr hazinesini olu\u015fturmas\u0131 yolu da uzundur.
